Vegetarian Stew

  • 3 tablespoons olive oil
  • 2 garlic, finely chopped
  • 1/2 onions, finely chopped
  • 1 eggplant, cut into cubes
  • 2 pumpkins, sliced
  • 2 cups spinach
  • 3 cups tomato purée, Del Fuerte® Seasoned
  • 1 cup chickpeas, cooked
  • 2 teaspoons salt
  • 3 tablespoons fresh cilantro, finely chopped

  • Heat the oil in a medium pot. Add the garlic and onion, sauté for one minute. Add the eggplant and cook for two minutes. Incorporate the zucchini and cook for two more minutes. Add the spinach, the Del Fuerte® Seasoned Tomato Purée, and cook for 10 minutes over medium heat.
  • Incorporate the chickpeas, mix, and add the salt, let cook for 5 more minutes. Remove from heat and sprinkle with cilantro.
