Vegetarian Stew

  • 3 tablespoons olive oil
  • 2 garlic, finely chopped
  • 1/2 onions, finely chopped
  • 1 eggplant, cut into cubes
  • 2 pumpkins, cut into slices
  • 2 cups spinach
  • 3 cups tomato purée, Flavored Del Fuerte®
  • 1 cup chickpeas, Cooked
  • 2 teaspoons salt
  • 3 tablespoons fresh cilantro, finely chopped

  • Heat the oil in a medium saucepan. Add the garlic and onion, sauté for a minute. Add the aubergine and cook for two minutes. Add the squash and cook for two more minutes. Add the spinach, the Fuerte Condimentado Tomato Puree and cook for 10 minutes over medium heat.
  • Add the chickpea, mix and add salt, cook for 5 more minutes. Remove from heat and sprinkle with cilantro.
