The vegetarian stew is a simple preparation, delicious and above all very delicious. It is the ideal option for when you want to eat something fast and nutritious. It is a rich broth, where you will not miss the meat.

Ingredients

5 servings
  • 3 spoonfuls of olive oil
  • 2 garlic finely chopped
  • 1/2 onion finely chopped
  • 1 eggplant cut into cubes
  • 2 pumpkins cut into slices
  • 2 cups of spinach
  • 3 cups of tomato puree Flavored Del Fuerte®
  • 1 Cup of chickpea Cooked
  • 2 teaspoons of Salt
  • 3 spoonfuls of coriander finely chopped

    Preparation

    Heat the oil in a medium saucepan. Add the garlic and onion, sauté for a minute. Add the aubergine and cook for two minutes. Add the squash and cook for two more minutes. Add the spinach, the Fuerte Condimentado Tomato Puree and cook for 10 minutes over medium heat.
    Add the chickpea, mix and add salt, cook for 5 more minutes. Remove from heat and sprinkle with cilantro.

    PRESENTATION

    Accompany with bread.

    TIPS

    You can serve it cold or hot.
