Ingredients

5 portions
  • 3 tablespoons olive oil
  • 2 garlic, finely chopped
  • 1/2 onions, finely chopped
  • 1 eggplant, cut into cubes
  • 2 pumpkins, cut into slices
  • 2 cups spinach
  • 3 cups mashed tomatoes, Flavored Del Fuerte®
  • 1 cup chickpea, Cooked
  • 2 teaspoons salt
  • 3 tablespoons fresh coriander, finely chopped

Preparation

Heat the oil in a medium saucepan. Add the garlic and onion, sauté for a minute. Add the aubergine and cook for two minutes. Add the squash and cook for two more minutes. Add the spinach, the Fuerte Condimentado Tomato Puree and cook for 10 minutes over medium heat.
Add the chickpea, mix and add salt, cook for 5 more minutes. Remove from heat and sprinkle with cilantro.

PRESENTATION

Accompany with bread.
