Vietnamese Shrimp Rolls

  • vegetable oil
  • 500 grams shrimp, clean, without head or tail
  • salt
  • pepper
  • 1/4 cups rice vinegar
  • 1/2 cups water
  • 1/4 cups sugar
  • 2 tablespoons garlic, finely chopped
  • 1 tablespoon soy sauce
  • 1 tablespoon broken chile
  • 2 tablespoons cornstarch
  • 6 rice leaf
  • water
  • 6 leaves lettuce
  • 1/2 cups mango, sliced
  • 1/2 cups red onion, into thin strips
  • 1/2 cups carrot, into thin strips

  • Heat a little oil in a pan and cook the shrimp with salt and pepper for 5 minutes or until well cooked. Set aside.
  • In a bowl, combine rice vinegar, water, sugar, garlic clove, soy sauce, crushed chili, and cornstarch. Cook in a small pot for 5 minutes or until it starts to thicken. Set aside.
  • Soak the rice papers in enough water for 15 seconds or until well hydrated.Place the hydrated rice paper on a board, add the shrimp, a lettuce leaf, red onion, mango, and carrot. Fold the edges inward and roll. Repeat the process until all ingredients are used.
  • Serve the Vietnamese rolls and accompany with the sauce.
