Watermelon Salad

Fresh arugula salad with watermelon, feta cheese, olives, and onion.

  • 1 watermelon , small, seedless, in cubes
  • 20 kalamata olives, in half
  • 2 cups arugula, washed
  • 1 lettuce, washed and picked
  • 1/3 cups red onion , thinly sliced
  • 3/4 cups feta cheese
  • 1 head shallot , chopped
  • 1/2 cups vinegar, of Sherry
  • 1 cup olive oil , or grape seed
  • salt , and pepper

  • For the vinaigrette: mix the shallots with the vinegar and add the oil while whisking. Season with salt and pepper.
  • For the salad: mix watermelon, olives, arugula, lettuce, red onion, and vinaigrette. Add diced feta cheese.
