1 watermelon , small, seedless, in cubes
20 kalamata olives, in half
2 cups arugula, washed
1 lettuce, washed and picked
1/3 cups red onion , thinly sliced
3/4 cups feta cheese
1 head shallot , chopped
1/2 cups vinegar, of Sherry
1 cup olive oil , or grape seed
salt , and pepper

For the vinaigrette: mix the shallots with the vinegar and add the oil while whisking. Season with salt and pepper.
For the salad: mix watermelon, olives, arugula, lettuce, red onion, and vinaigrette. Add diced feta cheese.
