Zucchini Alfredo Noodles with Chicken

  • 1 cup whipping cream
  • 1/8 onions
  • 1 clove garlic
  • 1/2 cups evaporated milk
  • 1/2 cups cream cheese
  • salt and pepper
  • 2 chicken breasts, skinless and cubed
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 2 packages Eva® clam of zucchini noodles, (300 g each)
  • 1 cup Manchego cheese, grated
  • 1/2 cups Parmesan cheese, grated
  • 1 teaspoon oregano
  • 4 teaspoons Parmesan cheese, for accompaniment
  • fresh oregano, for garnish

  • For the sauce, blend the heavy cream with the onion, garlic, milk, cream cheese, salt, and pepper until you get a homogeneous mixture.
  • In a skillet over medium heat, cook the previously seasoned chicken with olive oil and butter until golden brown. Add the Eva® Zucchini Noodles, season and cook for 1 minute.
  • Add the sauce, let it come to a boil, and add the manchego cheese, parmesan cheese, and oregano. Cook until the noodles are cooked and the sauce thickens. Adjust seasoning.
  • Serve immediately, garnished with parmesan cheese and fresh oregano.
