Zucchini Chalupas with Baked Cheese

  • 300 oaxaca cheese, grated

  • Preheat the oven to about 180 degrees C.
  • Wash and disinfect your medium-sized zucchinis.
  • Cut off the ends and slice them in half.
  • Now, with the help of a spoon, you can scoop out the center; it will be easy, and your zucchini won’t break.
  • Once the centers are clean, start filling your zucchini with the grated cheese, a drizzle of olive oil, and season with lemon pepper to taste.
  • Place your zucchinis in the oven for about 30 minutes; you’ll see the cheese melt and it will have a good consistency when tasted.
