Preheat the oven to 180° C.
Heat a small pot over medium heat with the lard, fry the onion until it is translucent, add the beans, mash until it becomes a puree, and cook for 10 minutes, season to your liking, and set aside.

Heat a skillet over medium heat and cook the chorizo until well fried, add the potato and set aside.
Spread all the nopales with beans and divide.
For the chorizo huaraches, place some of the potato with chorizo on 4 nopales, accompany with onion, serrano chili, cheese, cream, and avocado sauce.
For the steak huaraches, place the steak preparation and grated cheese over 4 other nopales, broil in the oven for 10 minutes. Decorate with cream, red sauce, avocado, and oregano.
For the cochinita huaraches, add the cochinita to the rest of the nopales and serve with pickled onions, habanero, and fresh cheese.
