3 Nopal Huaraches

  • 2 tablespoons onion, finely chopped
  • 2 cups beans, from the pot, with broth
  • 1 pinch salt
  • 12 nopales
  • 1 tablespoon vegetable oil, for the steak huaraches
  • 1/4 cups onion, sliced, for the steak huaraches
  • 1/2 kilos beefsteak, for the steak huaraches

  • Preheat the oven to 180° C.
  • Heat a small pot over medium heat with the lard, fry the onion until it is translucent, add the beans, mash until it becomes a puree, and cook for 10 minutes, season to your liking, and set aside.
  • Heat a grill over high heat and cook the nopales until they have the typical grilling marks, season and set aside.
  • For the steak, cook the onion with oil over medium heat until well fried, add the steaks, season to your liking, and cook until the meat is done. Set aside.
  • Heat a skillet over medium heat and cook the chorizo until well fried, add the potato and set aside.
  • Spread all the nopales with beans and divide.
  • For the chorizo huaraches, place some of the potato with chorizo on 4 nopales, accompany with onion, serrano chili, cheese, cream, and avocado sauce.
  • For the steak huaraches, place the steak preparation and grated cheese over 4 other nopales, broil in the oven for 10 minutes. Decorate with cream, red sauce, avocado, and oregano.
  • For the cochinita huaraches, add the cochinita to the rest of the nopales and serve with pickled onions, habanero, and fresh cheese.
