  • 6 guajillo chiles, rehydrated and seedless
  • 2 cloves garlic, grilled
  • 1/2 onions, grilled
  • 1/4 cups apple cider vinegar
  • 1/2 cups achiote, in paste
  • 1 teaspoon cumin powder
  • 1 teaspoon black peppercorn
  • salt
  • 1/2 kilos pork steak, in medium cubes
  • 2 tablespoons vegetable oil
  • 4 telera rolls
  • 2 cups refried beans
  • 2 cups Manchego cheese, shredded
  • onion, finely chopped
  • cilantro, finely chopped

  • Blend the guajillo, garlic, onion, apple cider vinegar, achiote, cumin, pepper, and salt. Then place the meat in a bowl and coat with the sauce.
  • Heat the oil in a skillet over medium-high heat, add the meat, and cook for 10 to 15 minutes or until cooked through.
  • Cut the bread in half. Add beans, al pastor meat, and manchego cheese, and heat on a griddle for 5 minutes or until slightly golden.
  • Serve the al pastor torta and add onion, cilantro, and green sauce.
