Avocado Cheese Filled Balls

Use the rice that you had leftover from the previous day and prepare these original croquettes with Oaxaca cheese, rice, and avocado. They are baked, so they are very crispy on the outside and creamy on the inside. You will love them!

2 avocados, for guacamole
1 tablespoon lime juice, for guacamole
3 tablespoons red onion, finely chopped for guacamole
3 tablespoons sour cream, for guacamole
3 tablespoons serrano chile, for guacamole
2 tablespoons fresh cilantro, finely chopped, for guacamole
1 tablespoon salt, for guacamole
1 cup brown rice, cooked
1/2 cups Oaxaca cheese
1/3 cups breadcrumbs, for breading
1/3 cups oats, ground, for breading
2 tablespoons flaxseed, ground, for breading
1 tablespoon parsley, finely chopped, for breading
1 tablespoon salt, for breading
1 tablespoon garlic powder, for breading
1 egg, beaten

Preheat the oven to 180°C.
In a bowl, mash the avocado until you get a puree. Mix with lime, onion, cream, chili, cilantro and season with salt. Incorporate the brown rice.
With the help of your hands, form balls to make the croquettes, placing a bit of Oaxaca cheese in the center. Set aside.
In a bowl, mix the bread with oatmeal, flaxseed, parsley, salt, and garlic powder.
Bread the croquettes by dipping them in beaten egg and then in the bread crumb mixture. Place on a baking tray and spray a little cooking oil.
Bake for 15 minutes or until crispy and golden on the outside.
Serve and accompany with salad or dressing of your choice.
