Aztec Cake with Romeritos

  • 1 cup vegetable oil
  • 15 corn tortillas
  • 3 cups romeritos, with mole
  • 1 cup sour cream
  • 2 cups Manchego cheese, grated

  • Preheat the oven to 180° C.
  • In a skillet over medium heat, heat the oil, fry the tortillas, and place them on paper towels to remove excess fat. Set aside.
  • Place the tortillas on a baking dish, add the romeritos, the cream, the cheese, and repeat the process until the dish is full.
  • Bake for 15 minutes to gratinate the cheese.
