1 cup vegetable oil
15 corn tortillas
3 cups romeritos, with mole
1 cup sour cream
2 cups Manchego cheese, grated

Preheat the oven to 180° C.
In a skillet over medium heat, heat the oil, fry the tortillas, and place them on paper towels to remove excess fat. Set aside.
Place the tortillas on a baking dish, add the romeritos, the cream, the cheese, and repeat the process until the dish is full.
Bake for 15 minutes to gratinate the cheese.
