Battered chile in tomato sauce

  • 5 tomatoes, for the sauce
  • 1/4 onions, for the sauce
  • 1 clove garlic, for the sauce
  • 2 cups chicken broth, for the sauce
  • salt, for the sauce
  • pepper, for the sauce

  • 4 Poblano chiles, roasted, cleaned, without skin or seeds
  • 2 1/2 cups refried beans
  • 2 cups Oaxaca cheese
  • flour
  • 5 egg yolks, for the batter
  • 5 egg whites, for the batter
  • Great Tradition® Oil, for frying
  • Mexican red rice, for serving

  • Blend the tomatoes, onion, garlic clove, chicken broth, salt, and pepper until all ingredients are well blended.
  • Heat a little Gran Tradición® Oil in a pot, pour in the sauce, and cook for 5 minutes. Add the battered peppers and cook for 2 more minutes. Remember that Gran Tradición® Oil will help preserve the original flavor of the sauce, keeping your seasoning intact.
  • Serve the stuffed battered peppers with tomato sauce and accompany with red rice.
  • Stuff the poblano peppers with beans and cheese, close with a toothpick, and dust with flour, making sure to cover them completely. Set aside.
  • Use a hand mixer to beat the egg whites until they double in size and are firm. Gradually add the yolks until fully integrated. Dip the floured peppers in the batter.
  • Heat enough Gran Tradición® Oil in a pan over medium heat. Place the battered peppers and cook for 3 minutes on each side or until golden brown. Drain and set aside.
