Bean with Pork and Pico de Gallo

Bean with pork is a classic dish from southeastern Mexico. The pork is cooked in a brothy stew of black beans and is usually flavored with epazote. This bean with pork recipe can be accompanied by salsa, tortillas, and limes, it’s a delight!

1 kilo black beans, soaked
water, to cook the beans
1/4 onions, to cook the beans
1/2 heads garlic, to cook the beans
500 grams pork chump
250 grams pork knuckle
250 grams pork backbone
salt
1 sprig epazote
pico de gallo, for accompaniment
radish, sliced, for accompaniment
corn tortillas
cilantro, finely chopped, for decoration

Low
Cook the beans under pressure with enough water and an onion for approximately 40 minutes. Wait for the pressure to release and open the pot.
Add the pulp, spine, and pork knuckle to the pot, then add salt and close. Cook for 20 more minutes.
Once the pressure is released, open and add a sprig of epazote. Cook for 10 more minutes, without the lid.
Serve the bean with pork accompanied by pico de gallo, radishes, and tortillas. Decorate with cilantro.
