Bean with Pork and Pico de Gallo

Bean with pork is a classic dish from southeastern Mexico. The pork is cooked in a brothy stew of black beans and is usually flavored with epazote. This bean with pork recipe can be accompanied by salsa, tortillas, and limes, it’s a delight!

  • 1 kilo black beans, soaked
  • water, to cook the beans
  • 1/4 onions, to cook the beans
  • 1/2 heads garlic, to cook the beans
  • 500 grams pork chump
  • 250 grams pork knuckle
  • 250 grams pork backbone
  • salt
  • 1 sprig epazote
  • pico de gallo, for accompaniment
  • radish, sliced, for accompaniment
  • corn tortillas
  • cilantro, finely chopped, for decoration

  • Cook the beans under pressure with enough water and an onion for approximately 40 minutes. Wait for the pressure to release and open the pot.
  • Add the pulp, spine, and pork knuckle to the pot, then add salt and close. Cook for 20 more minutes.
  • Once the pressure is released, open and add a sprig of epazote. Cook for 10 more minutes, without the lid.
  • Serve the bean with pork accompanied by pico de gallo, radishes, and tortillas. Decorate with cilantro.
