  • 8 guajillo chiles, cleaned, deveined, and soaked in hot water
  • 2 cloves garlic
  • 1/4 white onions
  • 1 pinch salt
  • lard
  • 1/2 cups longaniza, chopped
  • 1/4 cups white onion, finely chopped
  • 1 cup beefsteak, chopped
  • 4 pambazo rolls
  • lettuce, finely chopped, for serving
  • queso fresco, reduced-fat, crumbled, for serving
  • sour cream, low-calorie, for serving
  • green salsa, raw, for accompaniment

  • For the marinade, blend the chiles with a bit of the soaking water, garlic, onion, and a bit of salt until achieving a smooth marinade.
  • Fry the marinade with a bit of lard in a pot over medium heat for about 5 minutes, adjust seasoning and set aside.
  • For the filling, heat a skillet over medium heat and cook the longaniza until it releases its fat. Add the onion and the beef, cook until the meat is done, and season with salt and pepper.
  • Cut the breads in half and soak them in the marinade. Lightly fry on a griddle with a bit of lard until golden. Fill them with the beef filling and serve with lettuce, reduced-fat fresh cheese, low-calorie sour cream, and raw green sauce.
