Broccoli and Carrot Croquettes

Croquettes will always be one of everyone's favorite dishes. Prepare these broccoli and carrot croquettes with Parmesan cheese, breaded with corn flakes to make them crunchier and more delicious. You will love them.

  • 2 cups broccoli, blanched and chopped into very small pieces
  • 1 cup carrot, finely grated
  • 1 cup potato, cooked and mashed
  • 1/4 cups Parmesan cheese, finely grated
  • 1 egg
  • 1 pinch salt
  • 1 pinch pepper
  • 1 cup wheat flour
  • 2 eggs, batter, for breading
  • 1 cup corn flakes, ground, for breading
  • 1/2 cups canola oil
  • lime, for serving

  • In a bowl, mix the broccoli with the carrot, potato, Parmesan cheese, egg, salt, and pepper.
  • Shape the croquettes by hand and bread them by passing through flour, egg, and corn flakes.
  • Heat the oil in a skillet over medium heat, fry the croquettes until golden brown, and remove the excess fat.
  • Serve with salad and add lemon if desired. Enjoy.
