Carreteiro Rice

Carreteiro rice is a traditional dish from Brazilian cuisine and originates from Rio Grande do Sul.

  • 1 cup rice
  • 1/2 kilos beef rib
  • 1/2 kilos pork ribs
  • 2 cups meat broth
  • 1/4 kilos longaniza
  • 1/4 kilos bacon
  • 1/2 red onions
  • 1/4 white onions
  • 1/2 yellow bell peppers
  • 1/2 red bell peppers
  • 1/2 orange bell peppers
  • 3 cloves garlic
  • 1 tablespoon salt
  • 1 tablespoon pepper
  • 50 milliliters vegetable oil
  • 1 cup water
  • 1 bunch herb bundle

  • Place the rice in a container, wash it, and soak it in warm water until it cools, then drain.
  • In a pan, cook the ribs (beef and pork) with enough water, the herbs, 1/4 of the white onion, and one clove of garlic, season with salt and pepper to taste. When cooked, remove them and cut into small cubes. Reserve the broth.
  • Cut the red onion, bell peppers, and bacon into small cubes, chop the remaining 2 cloves of garlic finely, and cut the sausage as desired.
  • In a medium/high pot, put the sausage and bacon until well fried; when ready, remove from the pot. With the remaining fat in the pot, fry the garlic, onion, and bell peppers.
  • In the pot with the vegetables, add the ribs, bacon, sausage, and the cup of rice, mix thoroughly and add the two cups of broth we reserved.
  • Cover and simmer on low heat for 20 minutes, until the rice is well cooked.
