This cauliflower boneless recipe in the air fryer is healthy, easy to cook, and quick to prepare! Furthermore, it’s a perfect dish to break the routine and eat something fun and healthy.
2 tablespoons La Botanera® Chilito chile powder, powder
1 cup amaranth flour, for the crust
1 cup Cotija cheese, finely crumbled, for the crust

3/4 cups yogurt, sugar-free, for the dressing
2 tablespoons blue cheese, for the dressing
1 teaspoon garlic powder, for the dressing
2 tablespoons chives, for the dressing

Place the cauliflower florets in a bowl, season with olive oil, salt, pepper, and Chilito La Botanera® powder.
Mix the amaranth flour with the cotija cheese in a bowl.
To bread: Dip the seasoned cauliflower florets in La Botanera® reduced sodium, then in the flour mixture; repeat this step if you want a thicker crust. Then spray with cooking oil.
Cook the boneless in the air fryer for 20 minutes at 200 °C or until golden brown. Remove and let cool for 5 minutes.
Place the cauliflower in a bowl and coat with La Botanera® reduced sodium and Chilito La Botanera® powder to taste.
For the dressing: Mix the yogurt, blue cheese, garlic powder, and chives in a bowl, then season with a little pepper.
Serve the cauliflower and sprinkle with parsley, accompany with the blue cheese dressing and the carrot and celery crudités.
