Cauliflower Green Enchiladas with Chicken

  • 4 cups cauliflower, shredded, for the cauliflower tortillas
  • 1/2 cups Chihuahua cheese, low-fat, shredded, for the cauliflower tortillas
  • 2 eggs, for the cauliflower tortillas
  • 5 cups water, for the green sauce
  • 10 tomatillos, for the green sauce
  • 4 serrano chiles, for the green sauce
  • 1/4 onions, for the green sauce
  • 1 clove garlic, for the green sauce
  • salt, for the green sauce

  • 1 tablespoon olive oil, for the green sauce
  • 2 cups chicken breast, cooked and shredded
  • Manchego cheese, low-fat, for baking

  • In a bowl, place the cauliflower, cover with plastic wrap, and microwave for 4 minutes. Drain to remove the water and set aside.
  • Mix the cauliflower with the cheese, eggs, season with salt and pepper, and mix until combined.
  • Place the cauliflower mixture on a baking sheet lined with parchment paper and spread it out until it is the size and shape of a tortilla. Bake for 15 minutes at 180°C.
  • Fill the tortillas with shredded chicken and set aside.
  • In a small pot with water, cook the tomatoes, serrano chiles, onion, and garlic over medium heat. Let cool, blend, and set aside.
  • In a small pot over low heat, heat the olive oil, pour in the sauce, season with salt and pepper, and cook for 10 minutes or until it thickens.
  • Serve the enchiladas on a serving plate, drizzle with the hot sauce, add the manchego cheese, microwave for 30 minutes to gratin, and garnish with cream, avocado, and onion.
