Cauliflower Patties in Tomato Sauce

Treat your family on a meatless Monday by preparing these battered cauliflower patties with cheese, served with a delicious tomato sauce that is very filling and easy to make.

  • 5 tomatoes
  • 1/4 onions
  • 2 cloves garlic
  • 1 1/4 cups water
  • 1 tablespoon vegetable oil
  • salt and pepper
  • 1 leaf bay
  • 1 kilo cauliflower, in small pieces
  • 1/2 cups onion, finely chopped
  • 1 cup queso fresco, grated
  • 1 egg
  • 1/2 cups breadcrumbs
  • 1 cup flour
  • 3 egg whites
  • 3 egg yolks
  • 1 cup vegetable oil, for frying

  • For the sauce, blend the tomatoes with the onion, garlic, and water.
  • Heat the oil over medium heat, using a strainer, pour in the tomato sauce, season with bay leaf, salt, and pepper, cook for 10 minutes or until thickened and set aside.
  • Place the cauliflower in a microwave-safe bowl and cover with non-stick plastic wrap, microwave for 10 minutes. Let cool and set aside.
  • Mash the cauliflower, add the onion, cheese, egg, and breadcrumbs, using a spoon to mix all the ingredients together.
  • Using your hands, form the patties, coat with flour, and set aside.
  • Whisk the egg whites with a pinch of salt until they are stiff.
  • Add the egg yolks one at a time and beat for 1 minute, without over-beating, just to combine.
  • Dip the previously floured patties in the egg mixture and fry in hot oil until golden brown. Drain on paper towels.
  • Serve the patties hot and drizzle with the tomato sauce.
