  • 5 dried chipotle chile, for the chipotle sauce
  • 1 clove garlic, for the chipotle sauce

  • Mix the ground chicken, egg, breadcrumbs, cilantro, parsley, rice, salt, pepper, and rice in a bowl. Form the meatballs.
  • Place the balls in a bowl and move in circular motions to shape them.
  • Heat the oil in a saucepan and cook the meatballs until golden brown.
  • Blend the tomatoes, the dried chipotle pepper, the garlic, the onion, and the chicken broth.
  • Add a bit of oil in a saucepan over medium heat, pour in the sauce, and cook on low for 20 minutes. Incorporate the meatballs and bay leaf and simmer for 15 more minutes.
