Chicken Sopes in Green Sauce

  • 1/2 cups yellow onion, chopped
  • 3 cloves garlic, chopped
  • 2 cups chicken, cooked and shredded
  • 1 cup green salsa
  • 1 cup masa dough
  • 1/2 teaspoons salt
  • 3/4 cups water, warm
  • 1/4 cups sour cream
  • 3/4 cups queso fresco
  • 2 chives, chopped

  • Heat a large skillet sprayed with cooking spray over medium heat. Add the yellow onion; cook, stirring, for 3 minutes. Add the garlic and chicken; cook for 3 minutes, stirring occasionally. Stir in 1/2 cup of sauce; cook for 2 minutes or until completely heated through, stirring frequently. Keep this warm.
  • Mix the dough, salt, and water until a soft dough forms. Divide it into 8 pieces; flatten each into a 4-inch disk. Heat a large skillet or comal over medium-high heat. Add the sopes in batches; cook for 2 minutes or until lightly golden on both sides, flipping them every 30 seconds. Use your thumb and index finger to make a 1/4-inch high border on each sope.
  • Combine the remaining sauce with the sour cream; spread the mixture over the sopes. Top with the chicken mixture, cheese, and green onions.
