Mix the dough, salt, and water until a soft dough forms. Divide it into 8 pieces; flatten each into a 4-inch disk. Heat a large skillet or comal over medium-high heat. Add the sopes in batches; cook for 2 minutes or until lightly golden on both sides, flipping them every 30 seconds. Use your thumb and index finger to make a 1/4-inch high border on each sope.
Combine the remaining sauce with the sour cream; spread the mixture over the sopes. Top with the chicken mixture, cheese, and green onions.
