BBQ Chimichanga

This recipe inspired by the delicious northern dish is an excellent option to try something different. Perfect for sharing with the people you love.

  • 2 carrots
  • 1/4 onions
  • 1/2 bell pepper
  • 1 pumpkin, medium
  • 10 green beans
  • 2 chicken breasts
  • 12 flour tortillas
  • 3/4 cups Hunt's ® BBQ chipotle sauce
  • 1/2 oranges, just the juice
  • salt and pepper
  • 3/4 cups sour cream, for the dressing
  • 2 tablespoons Hunt's ® BBQ chipotle sauce, for the dressing

  • Mix Hunt's® Chipotle BBQ Sauce with orange juice. Add salt and pepper to taste.
  • Peel the carrot and finely chop it, marinate it with a little of the Hunt's® Chipotle BBQ Sauce. Chop the onion, bell pepper, and zucchini and marinate them in another bowl with another portion of the sauce. Cut the chicken into small cubes and marinate it with the remaining sauce. Let everything rest for 20 minutes.
  • In a hot pot, add the carrots and cook for a few minutes over low heat. Add the rest of the vegetables and cook a little longer. Finally, add the chicken and cook, stirring constantly until the chicken starts to brown and is well cooked. Remove from heat.
  • While the previous ingredients are cooking, mix the cream with the Hunt's® Chipotle BBQ Sauce to make the dressing.
  • Heat a tortilla, spread it on a plate, and spread a teaspoon of the dressing.
  • To assemble the chimichanga, take a portion of the chicken with vegetables and place it in the center of the tortilla. Fold one side of the tortilla over the chicken, then take the left and right sides and wrap them inward. Finally, turn the chimichanga so that the last fold of the tortilla is underneath.
  • Preheat a skillet with a little oil. Carefully take the chimichanga and place it in the skillet in the same position it was wrapped to prevent it from unfolding. Fry until golden brown and then fry the opposite side.
  • Serve them hot and use the rest of the BBQ dressing to accompany them.
