3 cloves garlic, peeled and roasted, for the sauce

1 cup chicken broth, for the sauce
500 grams chorizo, sliced
1/2 red onions, cut into strips
2 carrots, skinless, sliced
2 potatoes, skinless, cooked, and cut into medium cubes
3 güero chiles, sliced
2 cups pinto beans, whole and cooked

Season the chicken with salt and pepper. Set aside.
Blend the roasted tomato, roasted garlic, oregano, chicken broth, and enough salt until the ingredients are well combined. Set aside.
Sauté the chorizo and red onion in a pot over medium heat until golden, but remember that it is not necessary to add oil, as the chorizo will release enough fat. Remove and set aside.
In the same pot, fry the chicken over medium heat until the skin is golden, then add the carrot, cooked potato, and yellow chilies, keep over low heat for 10 minutes and stir regularly all the ingredients.
Pour the tomato broth, beans, cover, and cook over low heat for another 10 minutes. After the time is up, uncover and add the chorizo with the onion, cook for 5 more minutes, and remove from heat.
Serve the chicken enfrijolado with chorizo in a deep plate and garnish with pickled chilies and onion.
