Chicken in Grape Sauce

  • butter, for sealing the chicken
  • 2 chicken drumsticks, skinless
  • 2 chicken thighs, skinless
  • 1/2 cups evaporated milk, for the sauce
  • 1 cup table cream, for the sauce
  • 1 1/2 cups green grapes, seedless, for the sauce
  • 1 cup cream cheese, in cubes, for the sauce
  • salt, for the sauce
  • pepper, for the sauce
  • 2 tablespoons butter, in cubes
  • green seedless grapes, cut in half, for garnish
  • parsley, finely chopped

  • Melt the butter in a skillet over medium heat, add the chicken thighs and drumsticks, and season with salt and pepper. Cook the chicken for 5 minutes on each side or until well browned. Remove from heat.
  • For the grape sauce: Blend the evaporated milk, the cream, the grapes, the cream cheese, salt, and pepper at medium speed for 5 minutes.
  • Melt the butter in the same skillet where you cooked the chicken and heat the sauce to concentrate its flavors more.
  • Add the chicken and cook in the grape sauce for 10 minutes, until it boils and thickens.
  • Serve the chicken in grape sauce on a plate, drizzle with more grape sauce, garnish with green grapes, and sprinkle with parsley.
