  • 8 thighs and drumsticks

  • 2 cups chicken broth
  • 6 guajillo chiles
  • 6 árbol chiles
  • 2 cloves garlic
  • 1/4 cups onion
  • 1 teaspoon cumin seeds
  • 2 cups chicken broth
  • 2 bay leaves
  • white rice, for serving

  • Heat the oil in a large saucepan, add the chicken pieces, season with salt and pepper, and cook for 5 minutes. Pour in the chicken broth, cover, and cook for 15 more minutes.
  • Add a little more oil to a skillet and sauté the guajillo chilies, árbol chilies, garlic cloves, and onion until slightly soft. Set aside.
  • Blend the previous preparation with chicken broth, cumin, and salt. Set aside.
  • Pour the red sauce over the chicken and cook on low heat for 10 minutes, then add the bay leaves and cook for 10 more minutes.
  • Serve the chicken in red sauce and accompany with white rice and tortillas.
