Chipotle Chicken Bake

  • 3/4 cups water, warm, 200 milliliters
  • 4 tablespoons olive oil
  • 1 tablespoon salt
  • 2 cups flour, 400 grams
  • 11 grams dry yeast, 1 packet of 11 grams

  • 2 cups Bionda® cottage cheese, for the sauce
  • 1/2 cups milk, for the sauce
  • 1/2 cups chipotle chile in adobo sauce, for the sauce
  • 1 cup bacon, in thin strips
  • 2 cups chicken breast, in medium cubes

  • 1 cup Parmesan cheese, grated
  • 1 cup Mozzarella cheese, grated
  • 1 egg
  • Mozzarella cheese, grated, for garnish

  • Mix the warm water, oil, and salt in a bowl until combined. Remember that the water should be warm to help activate the yeast more effectively.
  • Form a volcano with the flour on a surface or in a bowl, gradually add the warm water and oil mixture, and begin to incorporate using your clean hands. Once you have incorporated all the liquid, add the yeast while continuing to mix. Then, knead for 10 minutes or until you achieve an elastic mixture, then shape the dough into a ball and place it in a bowl previously greased with olive oil. Also, place a bit of oil on the dough to prevent it from drying out and cover with plastic wrap. Let it rest for 1 hour to ferment and allow the dough to double in size; do this in a warm place, such as near the oven or stove.
  • Blend the Bionda® Ricotta, milk, and adobo chipotle until you achieve a smooth and creamy consistency. Let cool and set aside.
  • Sauté the bacon in a skillet over medium heat until golden, add the chicken and the previous preparation, then season with salt and pepper. Let cool and set aside.
  • Preheat the oven to 200 °C.
  • Once the time has passed, transfer the dough to a floured surface and punch it down with your fist, then divide into 2 equal portions. Roll out each portion into a rectangular shape and with a thickness of half a centimeter. Fill each rectangle of dough with chicken, grated Parmesan cheese, and mozzarella cheese. Fold the chicken bake into an envelope shape, tucking the edges underneath.
  • Transfer the chicken bakes to a baking sheet lined with parchment paper, brush with egg, and top with mozzarella cheese. Bake at 200 °C for 25 minutes.
  • Serve the chicken bake with chipotle, cut, and accompany with Ranch dressing.
