Creole Chicken

  • 4 cloves garlic
  • dried oregano
  • ground cumin
  • salt
  • black pepper
  • 3/4 cups orange juice
  • 1/4 cups lime juice
  • 3 chicken drumsticks
  • 3 chicken thighs
  • 3/4 cups white onion, in thin slices
  • vegetable oil
  • 1/2 cups white wine
  • white rice

  • Mash the garlic cloves, oregano, cumin, salt, and pepper. Then mix with the orange juice and lemon juice.
  • Place the chicken in a bowl, marinate with the garlic and juice mixture and half of the onions. Let it rest in the refrigerator for 3 hours.
  • Remove the chicken from the marinade, pat it slightly dry. Reserve the marinade.
  • Heat the oil in a pot over medium heat, fry the chicken pieces for 3 minutes on each side or until lightly browned, remove from heat and set aside.
  • In the same pot, pour a little more oil and fry the onion until it begins to soften. Then, add the marinade and the dry white wine and let it boil.
  • Add the chicken to the pot with the boiling marinade, cover, and cook over low heat for 25 minutes or until the creole chicken is well cooked.
  • Serve the creole chicken on a plate and accompany it with white rice.
