Easy Chicken Entomatado

  • 2 1/2 cups tomatillo, quartered

  • Pour oil into a skillet, add the precooked potatoes and lightly brown.
  • Add the finely chopped onion, the finely chopped garlic, and once they are lightly browned, incorporate the chicken and seal on all sides.
  • When the chicken is well browned, add the quartered tomatillos and continue cooking over medium heat.
  • Add 2 tablespoons of adobo chipotle chili and season with salt and ground black pepper.
  • Incorporate all the ingredients and add the fresh cilantro and chicken broth.
  • Cover and cook the entomatado on low heat for 8 to 10 minutes.
  • Adjust the seasoning and serve the chicken entomatado with fresh cilantro leaves.
