2 1/2 cups tomatillo, quartered
1/2 cups onion, finely chopped
2 cloves garlic, finely chopped
6 chicken thighs, cleaned with no bones or skin, chicken breast can also be used
2 tablespoons chipotle chile in adobo sauce, canned
1 cup chicken broth, fat-free
1 cup fresh cilantro, stemless
1 1/2 cups potato, peeled, slightly precooked

Pour oil into a skillet, add the precooked potatoes and lightly brown.
Add the finely chopped onion, the finely chopped garlic, and once they are lightly browned, incorporate the chicken and seal on all sides.
When the chicken is well browned, add the quartered tomatillos and continue cooking over medium heat.
Add 2 tablespoons of adobo chipotle chili and season with salt and ground black pepper.
Incorporate all the ingredients and add the fresh cilantro and chicken broth.
Cover and cook the entomatado on low heat for 8 to 10 minutes.
Adjust the seasoning and serve the chicken entomatado with fresh cilantro leaves.
