  • 2 cups jasmine rice, soaked
  • 2 cups water
  • salt
  • 1/4 onions
  • 1/2 cups McCormick® Balance Pineapple Flaxseed Preserve
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon ginger, shredded
  • 1 tablespoon garlic, finely chopped
  • 2 half chicken breasts, skinless and boneless

  • 1 cup celery, in small cubes
  • 1/4 cups red onion, finely chopped
  • 1/4 cups Jalapeño chile, finely chopped
  • 2 tablespoons lime juice
  • 2 tablespoons McCormick® Balance Pineapple Flaxseed Preserve
  • 2 tablespoons cilantro, finely chopped
  • cilantro leaves, for decoration
  • serrano chile, in thin slices
  • avocado, in slices, for decoration

  • Blend the water, onion, and salt.Place the rice in a pot and pour in the previously blended water. Cover and cook on low heat for 15 minutes or until ready. Set aside.
  • In a bowl, mix the McCormick® Balance Pineapple with Flaxseed Preserve, soy sauce, sesame oil, ginger, and garlic.
  • Heat the sesame oil in a grill or skillet over medium heat, add the chicken breasts, drizzle with the sauce, and cook the breasts for 15 minutes or until ready. Transfer to a cutting board and slice.
  • For the celery pico de gallo: mix the celery, onion, jalapeño chili, lime juice, McCormick® Balance Pineapple with Flaxseed Preserve, and cilantro in a bowl.
  • Serve a layer of rice in a bowl, add the chicken and pico de gallo, and decorate with cilantro leaves, chili, and avocado.
