Marinated Chicken Tacos

This marinated chicken taco recipe is a healthy, simple recipe ideal for those with diabetes.

  • 1/2 cups red onion, in strips
  • 1 tablespoon white vinegar
  • salt
  • 1 teaspoon oregano
  • 1/4 cups achiote, liquid
  • 3 guajillo chiles, rehydrated and deveined
  • 2 morita chiles, rehydrated and deveined
  • 2 ancho chiles, rehydrated and deveined
  • 2 garlic, roasted
  • 4 allspice berries
  • 1/2 teaspoons cumin
  • 1/3 cups water
  • 1 teaspoon olive oil
  • 600 grams chicken breast, in cubes
  • salt

  • 2 cups lettuce, leaves, to form the tacos

  • Place the chiles in a bowl with water and heat in the microwave for 3 minutes.
  • Mix the red onion in strips, vinegar, salt, and oregano in a bowl. Let it rest until serving.
  • Blend with a turbo the achiote, the soaked chiles, the roasted garlic, the allspice, the cumin, and the water.
  • Pour the olive oil in a skillet, then add the chicken, season with salt and pepper, and pour in the chili marinade. Cook for 10 minutes.
  • Form the tacos with the chicken and the lettuce leaves, garnish with pickled onions, and enjoy.
