  • 1/4 cups peanut butter
  • 1/4 cups lime juice
  • 1 tablespoon ginger, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 2 tablespoons rice vinegar
  • 2 cups Eva® Lemon Soy Salad
  • 2 chicken cutlets
  • salt

  • 2 tablespoons sesame oil
  • 1/4 cups soy sauce
  • vegetable oil
  • 1 cup rice noodle
  • rice leaf, rehydrated
  • cilantro leaves, for decoration

  • In a bowl, mix the peanut butter, lime juice, ginger, garlic, the vinaigrette from Eva® Soy Lemon Salad, and rice vinegar. Set aside.
  • Season the chicken with salt and pepper and cook in a pan over medium heat with sesame oil for 8 minutes. Add the soy sauce, cover, and cook for 2 more minutes. Cut into thin strips and set aside.
  • Heat a pot with enough oil over medium heat, add the rice noodles, and fry for 2 minutes. Remove and place on a plate with absorbent paper. Set aside.
  • To form the rolls: place a rehydrated rice paper sheet on a board, add a bit of Eva® Soy Lemon Salad, a bit of chicken, and a bit of rice noodles. Close and repeat until the filling is finished.
  • Serve the Thai chicken salad rolls on a plate and accompany with the peanut sauce, tortilla, almonds, and sesame from Eva® Soy Lemon Salad. Decorate with cilantro leaves.
