Ingredients: 1/4 cups peanut butter; 1/4 cups lime juice; 1 tablespoon ginger, finely chopped; 1 tablespoon garlic, finely chopped; 2 tablespoons rice vinegar; 2 cups Eva® Lemon Soy Salad; 2 chicken cutlets; salt; pepper; 2 tablespoons sesame oil; 1/4 cups soy sauce; vegetable oil; 1 cup rice noodle; rice leaf, rehydrated; cilantro leaves, for decoration

In a bowl, mix the peanut butter, lime juice, ginger, garlic, the vinaigrette from Eva® Soy Lemon Salad, and rice vinegar. Set aside. Season the chicken with salt and pepper and cook in a pan over medium heat with sesame oil for 8 minutes. Add the soy sauce, cover, and cook for 2 more minutes. Cut into thin strips and set aside.
