Chilaquiles in Pasilla Sauce

Nothing beats making chilaquiles at home, and these turn out spectacular with pasilla sauce; they are super easy to prepare, delight your whole family with this treat.

2 tomatoes, cut into quarters
1/4 onions
1 clove garlic
3 pasilla chiles
1 cube Knorr Tomate® tomato bouillon
1 tablespoon vegetable oil
6 cups tortilla chips
1/2 onions, sliced into rings
4 tablespoons fresh cilantro, chopped

Boil the tomato, onion, garlic, and chiles in enough water for 10 minutes or until the tomatoes are soft.
Blend the above with 1 cup of the cooking water and the Knorr® Tomato Seasoning cube. Strain.
Heat the oil and sauté the sauce over medium-low heat for 10 minutes or until it is slightly thickened.
Cover the tortilla chips with the sauce and serve with cotija cheese; garnish with onion rings and fresh cilantro.
