Place the flour tortillas on a board and fill them with poblano chili and asadero cheese, roll up the tortillas and secure with a toothpick if necessary.
Dip the flautas in the beaten egg and bread with the breadcrumbs. Place the flautas on a baking sheet, spray with cooking spray and bake until crispy.
For the sauce, heat a griddle over high heat and roast the tomatoes, tomatillos, garlic, and onion.
