In a bowl, mix ground pork, ground beef, cream, egg yolks, and egg. Mix until all ingredients are integrated.
Chop the ham into small cubes and add to the bowl.
Using a Victorinox® knife, chop the following ingredients into small cubes: apple dried apricots, peach dried apricots, finely chopped parsley, olives, and walnuts. Add them to the bowl along with Dijon mustard and season. Set aside
On a sky blanket, add the mixture forming a rectangle, place the eggs in the center and roll it up, sealing the ends of the roll tightly with string.
In a pot, cook the roll with water, garlic, onion, salt, and herbs for 30 minutes
Remove from the pot and let cool. Cut into thick slices and serve with a salad.
