Christmas Terrine

Surprise your guests with this flavorful terrine, with egg, olives, walnuts, bacon, and ham. You can eat it at any time of the day!

  • 4 cups ground meat, beef
  • 4 cups ground meat, pork
  • 1 1/2 cups bacon, fried and finely chopped
  • 1 1/2 cups deli ham, in thick slices of 1 cm
  • 2 egg yolks
  • 2 eggs
  • 1 cup sour cream
  • 1/2 cups walnuts
  • 12 eggs, cooked and peeled
  • 1 cup pistachios, peeled
  • 1 cup dried fruit, of apple
  • 1 cup dried fruit, of peach
  • 1/2 cups olives, boneless
  • 1 cup parsley
  • 2 tablespoons Dijon mustard
  • 2 cups onion
  • 2 garlic
  • 1 tablespoon bay
  • 1 tablespoon marjoram
  • 1 tablespoon allspice berry

  • In a bowl, mix ground pork, ground beef, cream, egg yolks, and egg. Mix until all ingredients are integrated.
  • Chop the ham into small cubes and add to the bowl.
  • Using a Victorinox® knife, chop the following ingredients into small cubes: apple dried apricots, peach dried apricots, finely chopped parsley, olives, and walnuts. Add them to the bowl along with Dijon mustard and season. Set aside
  • On a sky blanket, add the mixture forming a rectangle, place the eggs in the center and roll it up, sealing the ends of the roll tightly with string.
  • In a pot, cook the roll with water, garlic, onion, salt, and herbs for 30 minutes
  • Remove from the pot and let cool. Cut into thick slices and serve with a salad.
