Heat enough vegetable oil in a pot and sauté the onion, garlic, tomatillo, serrano chili, and allspice until they begin to soften and take on a lighter, shinier color. This will be the moment to pour in the chicken broth and add the cilantro. Cook for 6 more minutes over medium heat or until the broth boils. Remove from heat.
Blend the above until you achieve a homogeneous mixture.
Pour the blended mixture into a hot pot, add the chopped chicharrón, season with salt and pepper, and cook over medium-low heat for 5 minutes.
Serve in a clay pot, accompanied by tortillas and beans.
