Classic Chicharrón in Green Sauce

  • 2 tablespoons vegetable oil
  • 1/2 onions
  • 2 cloves garlic
  • 6 tomatillos, in quarters
  • 3 serrano chiles, without tail
  • 3 allspice berries
  • 2 cups chicken broth
  • 1/2 bunches cilantro, only the leaves
  • 350 grams pork rinds, chopped
  • salt
  • corn tortillas
  • black frijoles de la olla

  • Heat enough vegetable oil in a pot and sauté the onion, garlic, tomatillo, serrano chili, and allspice until they begin to soften and take on a lighter, shinier color. This will be the moment to pour in the chicken broth and add the cilantro. Cook for 6 more minutes over medium heat or until the broth boils. Remove from heat.
  • Blend the above until you achieve a homogeneous mixture.
  • Pour the blended mixture into a hot pot, add the chopped chicharrón, season with salt and pepper, and cook over medium-low heat for 5 minutes.
  • Serve in a clay pot, accompanied by tortillas and beans.
