Classic Falafel

Falafel is a traditional Arab dish, enjoyed in various Middle Eastern countries and even in India. This dish consists of small patties made with chickpeas or fava beans, although its preparation varies according to the country or region. In the Americas, it became known thanks to migration and has been enhanced with aromatic herbs and spices. Falafel is delicious, a vegetarian dish ideal for sharing.

  • 3 cups chickpeas
  • water, for the chickpeas
  • 1 cup onion, in medium cubes
  • 6 cloves garlic
  • 1/2 bunches cilantro, leaves
  • 1/2 bunches parsley, leaves
  • 1/4 bunches peppermint, leaves
  • 2 tablespoons cilantro seeds, ground
  • 2 tablespoons cumin, ground
  • 1 teaspoon turmeric
  • 1 tablespoon baking powder
  • salt
  • pepper
  • vegetable oil, for frying
  • pita bread, for garnish
  • hummus, for garnish
  • jocoque, for garnish
  • vegetables, Persian cucumber, colorful cherry tomatoes, red onion; for garnish

  • Soak the chickpeas a day before: Place the chickpeas in a bowl and cover with water, about 3 fingers above. Let it rest in a cool place for 24 hours and cover to avoid dust and impurities.
  • Once the soaking time has passed, drain the chickpeas and rinse with cold running water.
  • Place the chickpeas in a food processor along with the onion and garlic, grind for 3 minutes. Then add the cilantro, parsley, mint, coriander seeds, cumin, turmeric, baking powder, enough salt, and pepper. Grind for another 6 minutes or until everything is completely integrated.
  • With the help of your hands, form spheres of 5 centimeters in diameter. Fry at medium temperature in a pan with plenty of hot vegetable oil and then drain on absorbent paper. Set aside.
  • Serve the falafel accompanied by hummus, jocoque, pita bread, vegetables, and enjoy.
