The club sandwich is a classic recipe made with chicken and bacon, which kids love. Enjoy this homemade club sandwich recipe, as it is prepared quickly and easily, plus it is ideal for cooking with family.
Peel the potatoes using a peeler and cut them into elongated shapes of approximately 0.5 cm x 6 cm. Fry in enough hot vegetable oil over medium-low heat for 20 minutes, but constantly monitor the temperature. Remove the fries from the heat, drain on absorbent paper, and add salt once they come out of the oil. Set aside until needed.
To cook the chicken breast in the microwave: Place it in a bowl completely submerged in water, add salt and pepper, cover with plastic wrap, poke holes with a fork or knife, and cook for 18 minutes, in 3 intervals of 6 minutes each. Between each interval, you should check the breast, as depending on the microwave's power, it may cook in less time.
Once the breast is cooked, shred it using a couple of forks, season with salt and pepper, and set aside.
Fry the bacon slices in a grill pan over medium-low heat until golden, then drain on absorbent paper and set aside.
Brush the bread with melted butter on one side, then place it on the grill where you fried the bacon with the buttered side down and cover the second side with butter. Let the bread brown for 45 seconds on each side over low heat, remove from the grill, and set aside. Repeat until you have 3 slices of toasted bread.
Assemble your club sandwich: Spread one piece of toasted bread with mayonnaise, place the slices of cheese, the ham, the tomato slices, and cover with another piece of bread. Spread mayonnaise on this second piece of bread and now add the chicken, fried bacon, and lettuce leaves. Before covering, spread the last piece of bread with mayonnaise and place it on top. Secure the sandwich with a toothpick and cut into 4, so you have 4 triangles.
Serve the club sandwich with French fries and accompany with ketchup and pickled jalapeños. You will love it!
