Cod Carnitas

This recipe for Cod Carnitas is an excellent option for making delicious tacos during this Lenten season. These carnitas are made with fish and served with cilantro, onion, and spicy sauce like traditional carnitas tacos.

  • 3 liters water, to desalt
  • 1 kilo Langa® flaked cod
  • 1 cup evaporated milk
  • 1/2 cups orange juice, for marinating
  • 1 orange, cut into quarters
  • 2 cloves
  • 2 bay leaves
  • 1/2 onions, cut into quarters
  • 2 tablespoons garlic, finely chopped
  • 1/4 cups olive oil, for frying
  • corn tortillas, for serving
  • fresh cilantro, chopped, for serving
  • onion, chopped, for serving
  • lime, for accompaniment
  • red salsa, for serving

  • Soak the shredded Langa® cod in a pot with cold water, let it rest for 2 to 3 days until it is desalted. Change the water every 12 hours. Rinse and drain.
  • In a baking dish, place the desalted cod, add evaporated milk, orange juice, the orange, cloves, bay leaves, onion, and garlic. Marinate for 30 minutes, drain, and set aside.
  • In a skillet over medium heat, heat the olive oil, fry the cod until golden brown.
  • Heat some tortillas and serve the cod accompanied by onion, cilantro, lime, and red sauce.
