Corn cake is a South American dish made with a baked mixture of tender corn kernels, better known as elote, and depending on the place where it is prepared, it can be sweet or savory, ideal for serving as an appetizer or main dish.

5 cups yellow corn kernels, for the corn purée (pastelera)
1/4 cups milk, for the corn purée (pastelera)
1/4 cups basil, for the corn purée (pastelera)

2 tablespoons paprika, or merken, for the corn purée (pastelera)
1 tablespoon cornstarch, dissolved in 1/4 cup of water

In a pot, heat the oil and fry the meat, salt, and pepper. Cook for 3 minutes, add the paprika and cumin, mix, and cook for 3 more minutes.
Pour in the broth and onion and cook for 30 minutes.
Add the flour and dissolve. Set aside.
For the corn purée, melt the butter and cook the corn for 5 minutes. Add the milk, basil, salt, pepper, and paprika. Cook for 10 minutes.
In the processor, grind until it forms a purée. Add it to a pot with the cornstarch, mix, and cook for 5 minutes until thickened.
In a mold, add a layer of filling, then add the olives, raisins, and the egg, then cover with a layer of corn purée.
Bake at 200° C for 15 minutes. Let cool and enjoy.
