Delicious Mushroom Tacos

You can serve these delicious mushroom tacos with the classic garnish of chopped onion, cilantro, salsa, and lime. Just like traditional tacos, this mushroom recipe can give you a similar flavor to the popular carnitas, as among the ingredients you need are: bay leaf, coriander seeds, cilantro root, and clove. These seasonings are used to prepare the traditional carnitas made from pork and seasoned in their own fat, with evaporated milk, orange juice, and spices in large copper pots.

  • 2 tablespoons vegetable shortening
  • 3 cups oyster mushrooms
  • 1/4 white onions
  • 2 cloves garlic
  • 1 orange
  • 2 tablespoons white vinegar
  • 1/4 cups soy milk
  • 3 allspice berries
  • 1 tablespoon coarse salt
  • 2 leaves bay
  • 5 cilantro seeds
  • 1/4 cups cilantro, stalk
  • 3 cloves
  • 1 cup water
  • vegetable oil
  • corn tortillas
  • 1/4 cups onion, finely chopped
  • 1/4 cups fresh cilantro, finely chopped

  • In a pot over medium heat, melt the vegetable lard and add the mushrooms, onion, garlic, orange, white vinegar, soy milk, allspice, coarse salt, bay leaf, coriander seeds, cilantro root, clove, and water. Mix and cook on high heat for 15 minutes, stirring occasionally. Strain.
  • In a skillet, fry the mushrooms in oil until golden. Season to taste with salt and pepper.
  • On a cutting board, chop the mushrooms very small with the help of a knife.
  • Heat the corn tortillas and serve the mushrooms as tacos. Garnish with onion, cilantro, salsa, and lime. Enjoy.
