Delicious Stew Tacos

There is no better way to treat the family than with delicious stew tacos, which will be ready in just 15 minutes. You can choose between rajas with cream, potatoes with chorizo, or chops with nopales.

  • 2 tablespoons butter
  • 1/2 onions, in thin strips
  • 1 tablespoon garlic, finely chopped
  • 3 cups Poblano chile strips
  • 1/2 cups yellow corn, shredded
  • 1 cup sour cream
  • 1/2 cups Manchego cheese, grated
  • 2 tablespoons vegetable oil
  • 1 1/2 cups chorizo
  • 2 cups potato, canned, in cubes
  • 1 tablespoon vegetable oil
  • 4 smoked pork chops, in thin strips
  • 1/2 onions, in thin strips
  • 3 tomatoes, in small cubes
  • 2 serrano chiles, in slices
  • 3 nopales, in thin strips

  • Heat the butter in a clay pot and fry the onion, garlic, and rajas.
  • When the poblano pepper rajas are slightly browned, add the cream, corn, and cheese. Set aside.
  • Add the oil to a clay pot and fry the chorizo.
  • When the chorizo is browned, add the potatoes, season with salt and pepper.
  • Add the oil to a clay pot and fry the chops; when they are browned, add the onion, tomato, and nopales. Season with salt and pepper.
  • Add the serrano pepper and remove from heat. Serve the three stews in a clay pot.
