Drowned Pork Crackling Sandwich

Try this delicious drowned sandwich in sauce, filled with pork crackling from La Ramos®, which will ensure a delightful flavor, with a combination of serrano chili and nopales that you will love.

  • 5 tomatoes
  • 1/4 onions
  • 1 clove garlic
  • 1/2 cups tomato purée
  • 3 allspice berries
  • 1/4 tablespoons cumin
  • 1 tablespoon oregano
  • 1/2 cups water
  • salt
  • 4 birote rolls
  • vegetable oil
  • 1/2 cups onion, finely chopped
  • 1 cup tomato, finely chopped
  • 2 cups Chicharrón de la Ramos®
  • 1 cup nopal, precooked, in medium cubes
  • 1/4 cups serrano chile, in slices
  • pickled onions with Habanero chile, for garnish
  • avocado, sliced, for garnish

  • For the tomato sauce: Heat water in a pot until it boils, then cook the tomatoes for 8 minutes. Remove from heat and let cool slightly.
  • Blend the tomatoes with the onion, garlic, tomato puree, water, pepper, cumin, and oregano until fully combined. Cook the blended mixture in a pot for 8 minutes over medium-low heat and season with salt. Keep warm until use.
  • For the pork crackling: Heat oil in a pan and fry the onion and tomato for 5 minutes. Then add the pork crackling, nopales, and serrano chili. Cook for 4 minutes and set aside.
  • Split the bread roll, leaving one side uncut, like a book.
  • To serve the sandwich: Fill the bread roll with the pork crackling and pour the sauce over it. Garnish with avocado and pickled onion.
