Easy Pork Pozole

This pork pozole recipe is a Jalisco version, although it is now prepared in different regions, each with its own way of preparing and serving it. On this occasion, we give it an extra delicious touch with Del Fuerte®. Prepare this Mexican pozole and celebrate the festivities full of flavor!

  • 1/2 kilos hominy, for pozole, prepared to burst
  • 3 liters water
  • 1 head garlic
  • 1 leaf bay
  • 2 sprigs thyme
  • 1 kilo pork, mixed
  • 1 onion
  • salt
  • 1 cup Del Fuerte® seasoned tomato purée
  • 2 ancho chiles, soaked, for the red sauce
  • 3 guajillo chiles, clean and soaked, for the red sauce
  • 1 tablespoon piquín chile
  • 1 clove garlic, for the red sauce
  • 1/4 onions, for the red sauce
  • salt, for the red sauce
  • 1 tablespoon oregano, for the red sauce

  • radish, sliced, for serving
  • piquín chile, ground, for serving
  • Romaine lettuce, chopped, for serving

  • For the red sauce, while you cook the corn kernels, blend the ancho chiles with the guajillo chiles, piquín chiles, garlic, onion, and oregano in a blender; add the cup of Del Fuerte® seasoned puree. Set aside to add to the pozole later.
  • In a pot, boil the corn grain with water and cook for about 1.5 to 2 hours, until the corn bursts. Add the pork meat and the whole piece of onion, the head of garlic, thyme, and bay leaf, season with salt and cook for another hour and a half.
  • Once the time has passed, add the sauce you prepared in the previous step and let it cook for another 20 minutes; add more water if necessary and check the seasoning.
  • Serve the pozole with onion, oregano, radish, piquín chili, lettuce, and tostadas. Enjoy.
