Egg Patties in Green Sauce

  • 8 tomatillos, for the sauce
  • 4 serrano chiles, for the sauce
  • 1/4 onions, for the sauce
  • 1 clove garlic, for the sauce
  • 2 cups chicken broth , for the sauce
  • 1/4 bunches cilantro, for the sauce

  • 4 San Juan® eggs, for the patties
  • 1 cup queso fresco, grated, for the patties
  • vegetable oil , for frying the patties

  • For the sauce: Roast the tomatoes, serrano chili, onion, and garlic clove on a comal over medium heat until charred. Set aside.
  • Blend the tomatoes with the chicken broth and cilantro, season with salt and pepper. Set aside.
  • Heat the oil in a saucepan over medium heat and pour in the sauce. Cook for 10 minutes or until the sauce reaches a semi-thick consistency. Adjust seasoning and remove from heat.
  • For the patties: Separate the egg whites from the yolks of San Juan® eggs. Beat the egg whites until stiff peaks form. Set aside.
  • Lightly beat the egg yolks with a little salt until they change color slightly, then fold the yolks into the egg whites, add the cheese, and mix just until combined.
  • Heat the oil in a skillet over medium heat and drop a large spoonful of the previous mixture, frying for 5 minutes or until golden brown. Place on absorbent paper to remove excess oil.
  • Serve the egg patties in green sauce on a flat plate, accompanied by beans and rice.
