For the sauce: Roast the tomatoes, serrano chili, onion, and garlic clove on a comal over medium heat until charred. Set aside.
Blend the tomatoes with the chicken broth and cilantro, season with salt and pepper. Set aside.
Heat the oil in a saucepan over medium heat and pour in the sauce. Cook for 10 minutes or until the sauce reaches a semi-thick consistency. Adjust seasoning and remove from heat.
For the patties: Separate the egg whites from the yolks of San Juan® eggs. Beat the egg whites until stiff peaks form. Set aside.
Lightly beat the egg yolks with a little salt until they change color slightly, then fold the yolks into the egg whites, add the cheese, and mix just until combined.
Heat the oil in a skillet over medium heat and drop a large spoonful of the previous mixture, frying for 5 minutes or until golden brown. Place on absorbent paper to remove excess oil.
