Enchorizadas

Try this delicious recipe for enchorizadas, tasty enchiladas filled with Oaxaca cheese drenched in green sauce with chorizo. Surprise your whole family at mealtime!

  • 1/4 onions, grilled
  • 1 garlic, roasted
  • 6 tomatillos, grilled
  • 2 serrano chiles, roasted
  • salt
  • 1/2 cups chicken broth
  • 1/4 cups cilantro, only the leaves
  • 2 tablespoons vegetable oil
  • 1 1/2 cups chorizo
  • 1 cup Oaxaca cheese, shredded
  • 1/4 cups vegetable oil, to fry the tortillas
  • corn tortillas, hot
  • sour cream, for decoration
  • avocado, in medium cubes

  • Blend the onion, garlic, tomatoes, serrano chili, chicken broth, and cilantro, and season with salt. Blend until you achieve a very smooth sauce, as this will be the sauce for your enchiladas. Set aside.
  • Pour the oil into a pot and when it is hot over medium heat, add the chorizo and cook for 5 minutes or until golden. Add the green sauce and cook for 5 more minutes.
  • To form the taquitos: Place a warm tortilla on a board and add a strip of Oaxaca cheese, then close the taquito. Make several taquitos and set aside.
  • Pour vegetable oil into a skillet and cook the taquitos for 5 minutes or until golden brown. Remove from the oil and place on a plate with absorbent paper.
  • Place on a flat plate, cover with chorizo sauce, cream, and avocado. Enjoy your enchorizadas!
