Blend the onion, garlic, tomatoes, serrano chili, chicken broth, and cilantro, and season with salt. Blend until you achieve a very smooth sauce, as this will be the sauce for your enchiladas. Set aside.
Pour the oil into a pot and when it is hot over medium heat, add the chorizo and cook for 5 minutes or until golden. Add the green sauce and cook for 5 more minutes.
To form the taquitos: Place a warm tortilla on a board and add a strip of Oaxaca cheese, then close the taquito. Make several taquitos and set aside.
Pour vegetable oil into a skillet and cook the taquitos for 5 minutes or until golden brown. Remove from the oil and place on a plate with absorbent paper.
