Ingredients: 1/4 onions, grilled; 1 garlic, roasted; 6 tomatillos, grilled; 2 serrano chiles, roasted; salt; 1/2 cups chicken broth; 1/4 cups cilantro, only the leaves; 2 tablespoons vegetable oil; 1 1/2 cups chorizo; 1 cup Oaxaca cheese, shredded; 1/4 cups vegetable oil, to fry the tortillas; corn tortillas, hot; sour cream, for decoration; avocado, in medium cubes

Blend the onion, garlic, tomatoes, serrano chili, chicken broth, and cilantro, and season with salt. Blend until you achieve a very smooth sauce, as this will be the sauce for your enchiladas. Set aside. Pour the oil into a pot and when it is hot over medium heat, add the chorizo and cook for 5 minutes or until golden. Add the green sauce and cook for 5 more minutes.
