Place the fish fillets on a clean surface and season with garlic salt and pepper on both sides. Set aside.
Add flour, egg, sparkling water, oregano, paprika, and garlic powder in a bowl, then mix well with a hand whisk.
Dip the fish fillet in the batter, cover well, and repeat the same process until you finish with the fillets.
Heat oil in a deep pan over high heat and immediately fry the battered fillets for 3 minutes, until they achieve a golden color and a crispy texture. Remove from heat and drain excess fat with paper towels.
Add cornstarch, salt, and pepper in a bowl, mix very well. Coat the potatoes completely with the cornstarch and then fry in the same pan where you fried the fish. Cook on high heat for 3 minutes. Remove from heat and drain excess fat.
Place the battered fish with potatoes on a plate and serve with guacamole, garnished with orange.
