  • 6 fish fillets, cleaned and sliced into strips

  • 1 teaspoon paprika, for the batter
  • 1 teaspoon garlic powder, for the batter

  • 2 cups cornstarch, for the potatoes

  • 6 potatoes, in sticks, soaked in cold water
  • guacamole, for accompaniment
  • 1 orange, quartered, for garnish

  • Place the fish fillets on a clean surface and season with garlic salt and pepper on both sides. Set aside.
  • Add flour, egg, sparkling water, oregano, paprika, and garlic powder in a bowl, then mix well with a hand whisk.
  • Dip the fish fillet in the batter, cover well, and repeat the same process until you finish with the fillets.
  • Heat oil in a deep pan over high heat and immediately fry the battered fillets for 3 minutes, until they achieve a golden color and a crispy texture. Remove from heat and drain excess fat with paper towels.
  • Add cornstarch, salt, and pepper in a bowl, mix very well. Coat the potatoes completely with the cornstarch and then fry in the same pan where you fried the fish. Cook on high heat for 3 minutes. Remove from heat and drain excess fat.
  • Place the battered fish with potatoes on a plate and serve with guacamole, garnished with orange.
