Breaded Tuna Croquettes with Granola

Prepare these delicious tuna croquettes breaded with granola. They are very nutritious and have a delicious flavor, along with a crunchy granola crust. They are perfect for everyday meals, don’t take much preparation time, and your family will love them.

  • 2 1/2 cups Kellogg’S® granola ancestral grains; amaranth, flaxseed and blueberry
  • 2 potatoes, washed
  • 1 1/2 cups canned tuna in water, drained
  • 1/4 cups onion
  • 2 tablespoons garlic
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 3 tablespoons parsley, washed and disinfected
  • 1/4 cups breadcrumbs
  • 2 eggs
  • 1 cup flour
  • 1 cup vegetable oil

  • Peel the potatoes and cut them into medium cubes. Boil the potatoes in salted water until soft. Drain the potatoes and mash them with a fork. You can use a food processor for this step.
  • Finely chop the onion, garlic, and parsley, and add them to the potatoes. Add the drained tuna, salt, pepper, breadcrumbs, and 1 egg. Mix everything until you have a homogeneous mixture.
  • Shape into balls and coat them in flour. Beat the remaining egg and cover the balls, then finish breading them with Kellogg’s® Ancient Grains Granola; Amaranth, flaxseed, and blueberry.
  • In a pan, heat the vegetable oil and fry the balls until they are evenly golden. Place the balls on absorbent paper to remove excess fat.
