Caguamanta

Delicious coastal broth of mantaraya and shrimp, it is a typical Mexican recipe from the state of Sonora. It is a very flavorful broth that uses mantaraya, shrimp, vegetables, and spices.

  • 1/2 kilos fish, mantaray fillet
  • 250 grams shrimp
  • 1 carrot
  • 1 sprig celery
  • 5 tomatillos
  • 3 cloves garlic
  • 1 onion
  • vegetable oil, necessary amount
  • 1 cup tomato purée
  • 1 pinch oregano
  • 1 pinch cumin
  • salt, to taste
  • pepper, to taste
  • serrano chiles, to taste

  • In a deep pot, sauté in the following order: garlic, onion, carrot, celery, chili.
  • Add blended or finely chopped tomatoes along with the puree.
  • Fill with water to allow the carrot to cook, add various spices.
  • Chop the mantaraya and add it when the vegetables are already cooked.
  • Finally, add the shrimp and adjust the salt.
