Prepare these delicious cod fritters with Vizcaina sauce. They are easy to make and have great flavor. The sauce is made with tomato, bell pepper, and olives. It’s a perfect dish for Christmas, don’t miss trying it.
Cut the bell pepper and remove the seeds, quarter the tomato, remove the seeds, and finely chop both vegetables.
Remove the skin from the garlic and lightly sauté them in a pan with hot oil.
Add the finely chopped onion, bell pepper, and tomato. Remove the garlic from the pan and set it aside.
Pour the preparation into the blender and blend until you have a homogeneous sauce. Return the sauce to the heat and add the sliced olives, season with salt and pepper.
For the fritters, place the cod in a bowl and add chopped onion, finely chopped sautéed garlic, cilantro, salt, and pepper.
Mix well and add 1 egg and ½ cup of breadcrumbs. Form balls and coat each one in flour, then in egg, and finally in breadcrumbs.
Fry the balls in hot oil, and when they are golden, remove them from the oil and place them on Pétalo® paper towels to remove excess fat.
Serve a layer of the sauce on a plate and place the croquettes on top.
